Alex I used to just use butter cream icing as the kids loved the soft texture and it does not need to be flat.
For "Proper" icing you need a turn table and a steel staight edge to smooth and level the surface plus time and patience.

aww wow thanks Les i will try that in a bit, i cant do the butter cream thing as some of my rellies are dairy free but the turn table and straight edge sound like a plan batman cheers and maybe if i whisk up some soy margarine yeah cheers bud

also managed to burn the buggery out of biscotti so will have to either save or replace might need more almonds d'ho trying to do to many things at once

Substitute any non dairy spread in the butter cream icing,
Just start making slightly less than you need so you can adjust the texture when making up to the full amount.
