I think the CH video with beat meter up all the time wouldn't work as well, I can agree there. Honestly though I'd say that even in 2d I prefer the voice over and simple beats with a fading bar for full immersion. I think also with simple beats you could get away with never even showing the bar, after a bit you know what a 5-1, 7-1, or 3-3 pattern, etc is and don't really need the bar at all.
When I think about what would be great in VR I think back to blue magic. I think my favorite CH all time moment is when kendall give you the POV HJ. The reason being you are far into the CH and really aroused, shes dangled in front of you as a reward, building anticipation, followed by your first real POV scene where the beats are close to the action on screen. The anticipation of her coming up the stairs at you and it's so easy to slip into the role that you are there in person and she has her hand on you stroking you. It's always a powerful scene for me the way its built up to and performs and I've had to cheat my way through it 100% of the times I play.
I think that something like that in VR could be much more powerful of an experience as it can pull you in much more so than POV porn. I think anything that can take you there so you can feel more presence and get into the scene is where it can shine.
I don't know if you were caught this vr scene that was put together for the world pv games here (

He puts up 2d video walls on top of the 3d scene, and for some reason it just really made the 3d part of it hyper realistic to me. I could imagine more tricks form going from seeing a flat 2d scene and blowing it into 3d at key moments would really drag you straight into the scene. In a way at the start of audition where you have still shots and then cut to video immediately sort of brings you into the 'reality' of the video, cutting in 3d would be on another level.
I also think aesthetically really you can't beat what VR can put in front of your face. I do enjoy 2d still a lot, but a great 3d scene (which is harder and harder to find imho) with the right girl cannot be beaten in 2d.
Overtime how I view VR porn has changed for sure. I think also the device you are using can have a big impact. . I know my first scene I was literally shaking when a woman sat on the lap in scene and early on while now the 3d doesn't impact as much, but still is really nice to look at. This variety can make it really hard to lock down what you are going for and what people are feeling too.
So, in short summary, I think the voice over and call out simple beat style CH would work really well, and any of the CH styles that try to bring you into the story or scene would hit much stronger than ones that are more of a visual tour.
