Welcome and thanks for the huge post. So let's see hmm... alright - so here's from somebody who has been teased and has teased both over long distances and long durations. The discipline is tough, the fact that you're not there makes it tougher. The long durations make it tougher. I wanna stress that I'm only making suggestions here and it's up to you what you make of it, but I would be careful with racking additional weeks for every mishap. It's probably not everyone's style, but for me it's always about the dominant and the submissive tackling a goal together. If it keeps moving further and further away, motivation will suffer. So I would suggest to either start rewarding her for good behavior by subtracting days or at least stop racking them up and punishing her some other way.
