I've thought a bit about this. I can tell you all about the features or how I want to use it. What it really boils down to is whether or not you're happy with your current way of organizing and how down you are to learn something new. I am almost certain that there is nothing better for images than Hydrus. Yeah it's gonna take a while to get familiar with it. Good rule of thumb is only use what you know you need, so you're not overwhelmed by everything. And sometimes, when you feel like it, explore some menus and click some buttons. There's a lot you don't really need. By the way, few days ago I've found another neat app called stash (take a look at the demo video) that is meant to be an organizer for porn scenes. I haven't fiddled with it that much but so far the standout feature for me is timestamping your videos and not needing an extra directory, meaning no full commit like in Hydrus.
Maybe a mix of using hydrus and stash is gonna be king.
Regarding your question: You can set up export jobs which you can use to get a folder structure again.
