Bashir: "Of all the stories you told me, which ones were true and which ones weren't?"
Garak: "My dear Doctor, they're all true."
Bashir: "Even the lies?"
Garak: "Especially the lies."
Star Trek: Deep Space 9, episode The Wire

Enjoy!

Oooh I love Star Trek :-)

"Is there anything you need me to do while you're gone?"
"Like what?"
"I don't know. Any unfinished business?"
"Actually, Doctor... there is something."
"Oh, what?"
"If you go into my quarters and examine the bulkhead next to the replicator, you'll notice there's a false panel. Behind that panel is a compartment containing an isolinear rod. If I'm not back within 78 hours, I want you to take that rod... and eat it."
"Eat it?"
(affirmatively) "Hm."
"You're joking."
"Yes doctor, I am."

ST Deep Space Nine, "Improbable Cause"

Garak has got some really good quotes :-D

Quotes? Being a huge Star Trek nerd I'm sure I can find something...

I'm surprised that nobody has this one yet:
Capt. Jean Luc Picard, The Next Generation, Multiple episodes wrote: Make it so!
or
Capt. Jean Luc Picard, The Next Generation, Multiple episodes wrote:Engage!
or
Capt. Jean Luc Picard, The Next Generation, season 1 episode 13 wrote: Shut up, Wesley.
Lt. Worf, The Next Generation, season 4 episode 25 wrote:Klingons do not... pursue relationships. They conquer that which they desire.
And, keeping with some of the Star Trek themes, like science, progress and knowledge...
Ronald Regan, 40th President of the United States wrote: The future is not for the faint hearted, it belongs to the brave!"
John F. Kennedy, 35th President of the United States wrote: If this capsule history of our progress teaches us anything, it is that man, in his quest for knowledge and progress, is determined and cannot be deterred.
Kahlil Gibran, The Prophet wrote:Advance, and never halt, for advancing is perfection. Advance and do not fear the thorns in the path, for they draw only corrupt blood
David Hume, An Enquiry Concerning Human Understanding wrote:It seems, then, that nature has pointed out a mixed kind of life as most suitable to the human race, and secretly admonished them to allow none of these biases to draw too much, so as to incapacitate them for other occupations and entertainments. Indulge your passion for science, says she, but let your science be human, and such as may have a direct reference to action and society. Abstruse thought and profound researches I prohibit, and will severely punish, by the pensive melancholy which they introduce, by the endless uncertainty in which they involve you, and by the cold reception which your pretended discoveries shall meet with, when communicated. Be a philosopher; but, amidst all your philosophy, be still a man.

But i wanted to post different one that i believe shouldn't be missing here:
Sure it does (hurt). But i measure power not by the blows you can give, but by the blows you can take.

Also from what i consider to be some of the best StarTrek has to offer:
I will not sacrifice the Enterprise. We’ve made too many compromises already, too many retreats. They invade our space, and we fall back. They assimilate entire worlds, and we fall back. Not again! The line must be drawn here! This far and no further! And I will make them pay for what they’ve done!

Often we can help each other most by leaving each other alone; at other times we need the hand-grasp and the word of cheer.
