Because I want a player stroking, playing, not drawing lines and numbers.
I don't really care for how fast he goes through the maze, because I have other means to make the trip long enough (even with the map). It's irrelevant. But what happens a lot of time, I feel, is that people start trying to beat the maze in most efficient way rather than enjoying it, concentrating on the map far more, than on the maze itself.

One doesn't preclude the other. You still spend 90% of your time in the rooms, stroking. Pausing for a few seconds between rooms is a nice breather. And for me, personally, I really enjoy both aspects.

Well, even with mappable mazes one does not has to map it. If you find it annoying to do, you just don't have to and just wander around.
